It now also enables activation of a dynamic fermentation profile: in this way, the enologist can trace an expected fermentation curve and ask the plant to adjust to the curve with automatic variations in the set temperature.

On-site detection of fermentation data is carried out using a portable digital densitometer that can read, memorise and send to the supervisor data gathered by the operator during a normal sampling session.

The system can then generate alarms in the event of slowing down or acceleration in fermentation exceeding the set limits.
